Scenes from Chef Jonathon Sawyer's Kitchen

Dear Mayor Jackson,

Dear Mayor Jackson,

My name is Jonathon Sawyer. I’m a chef and business owner in downtown Cleveland. Our restaurant The Greenhouse Tavern is the first and only restaurant in the state of Ohio certified by the Green Restaurant Association for sustainable practice.  We proudly employ over 100 individuals in downtown Cleveland. I am writing to express my concern for the effects of the proposed garbage incinerator at the Ridge Road transfer station. The “gasification” process is not known to be a safe and sustainable solution for waste removal. The process will greatly increase the amount of soot, carbon monoxide, and mercury that our community ingests daily. While it may cut the cities fiscal expenses, the citizen’s environmental and health related costs would grow. It is imperative that we leave this world a better place for the next generation than it was left for ours. We can do this by focusing on recycling, composting, and reusing recourses, not by burning garbage and causing irreversible effect on our environment.

Sincerely,

Jonathon Sawyer
